\n Our trajectory (fourth generation of hoteliers) begins almost unconsciously when, since we were little, we lived from a family business in which without much ambition we helped our parents on weekends[vc_empty_space height=”30px”]We left Sig\u00fcenza to train professionally, but circumstances caused a radical turn in our lives when our father had to “lift his foot off the gas” of the business. So we decided to return to our town and carry on with it, but with a fundamental premise: to do what we liked.[vc_empty_space height=”30px”]A very important step that required a change of vision, both in concept and in business structure. We sit down and develop a new business strategy[vc_empty_space height=”30px”]We started with a slow and thoughtful transformation, until 2010 when we felt professionally prepared to decide by betting on giving a more personalized turn to our cuisine and positioning ourselves in the gastronomic market, with our identity, with two fundamental premises. The first, to be aware of our surroundings and the extraordinary ingredients of our region, revaluing them and staging them in a different, very personal way. The grandparents, Enrique and Pilar open the restaurant bar “El Motor” in Sig\u00fcenza[vc_empty_space height=”1px”]<\/p>\n

1970<\/h5>\n

The grandparents, Enrique and Pilar buy an old house from the 18th century which they will call “the doncel”[vc_empty_space height=”1px”]<\/p>\n

1973<\/h5>\n

The grandparents, Enrique and Pilar open the 2-star hostel \u00abel doncel\u00bb in the Casona they acquired[vc_empty_space height=”1px”]<\/p>\n

1975<\/h5>\n

The parents, Enrique and Elo\u00edsa take the reins of the Hostel and start up the restaurant “el doncel”[vc_empty_space height=”1px”]<\/p>\n

2001<\/h5>\n

Enrique and Eduardo take over the reins of the restaurant and Hostal \u00abel doncel\u00bb[vc_empty_space height=”1px”]<\/p>\n

2013<\/h5>\n

The business is expanded with the event farm “La Finca del Obispo”<\/p>\n

2020<\/h5>\n

The accommodation type classification of the 2-star Hostel is now classified as the 3-star Hotel \u00abel doncel\u00bb[vc_empty_space height=”1px”]<\/p>\n
