N\u00e9 \u00e0 Madrid en 1974. Il a \u00e9tudi\u00e9 la cuisine \u00e0 l’Ecole Sup\u00e9rieure d’H\u00f4tellerie et de Tourisme de Teruel, l’une des plus prestigieuses du pays. Au cours de ses ann\u00e9es d’\u00e9tudes, il a fait sa premi\u00e8re \u00e9tape \u00e0 Zalaca\u00edn sous les ordres de Benjam\u00edn Urdiain et plus tard \u00e0 l’H\u00f4tel Ritz un concours de cuisine r\u00e9gionale. Elle effectue son stage au restaurant \u00abRodero\u00bb \u00e0 Pampelune sous le commandement de Koldo Rodero[vc_empty_space height=\u00a0\u00bb30px\u00a0\u00bb]En 1997, apr\u00e8s avoir termin\u00e9 ses \u00e9tudes et \u00eatre le premier de sa promotion, il devient professeur \u00e0 l’\u00c9cole Sup\u00e9rieure d’Hospitalit\u00e9 Teruel, o\u00f9 il enseigne pendant quatre ans.[vc_empty_space height=\u00a0\u00bb30px\u00a0\u00bb]En 2001, il prend les r\u00eanes de l’entreprise familiale avec son fr\u00e8re Eduardo, et impose une nouvelle philosophie culinaire en jouant avec le meilleur produit de la r\u00e9gion.
