Origins

Our trajectory (fourth generation of hoteliers) begins almost unconsciously when, since we were little, we lived from a family business in which without much ambition we helped our parents on weekends
We left Sigüenza to train professionally, but circumstances caused a radical turn in our lives when our father had to “lift his foot off the gas” of the business. So we decided to return to our town and carry on with it, but with a fundamental premise: to do what we liked.
A very important step that required a change of vision, both in concept and in business structure. We sit down and develop a new business strategy
We started with a slow and thoughtful transformation, until 2010 when we felt professionally prepared to decide by betting on giving a more personalized turn to our cuisine and positioning ourselves in the gastronomic market, with our identity, with two fundamental premises. The first, to be aware of our surroundings and the extraordinary ingredients of our region, revaluing them and staging them in a different, very personal way. The second enjoy what we did, our cuisine and try to infect it and transmit that illusion to those who visit us

1860

The great-grandparents, Luciano and Sofía ran “El Café de la Estación” in Arcos del Jalón (Soria)

1950

The grandparents, Enrique and Pilar open the restaurant bar “El Motor” in Sigüenza

1970

The grandparents, Enrique and Pilar buy an old house from the 18th century which they will call “the doncel”

1973

The grandparents, Enrique and Pilar open the 2-star hostel «el doncel» in the Casona they acquired

1975

The parents, Enrique and Eloísa take the reins of the Hostel and start up the restaurant “el doncel”

2001

Enrique and Eduardo take over the reins of the restaurant and Hostal «el doncel»

2013

The business is expanded with the event farm “La Finca del Obispo”

2020

The accommodation type classification of the 2-star Hostel is now classified as the 3-star Hotel «el doncel»

2020

An intense architectural reform and a new interior decoration of the restaurant and the Hotel are undertaken
